    Cook the Spaghetti

    In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Cook the Pancetta

    In a large skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Everything

    Add the hot spaghetti to the skillet with the pancetta. Quickly pour the egg mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve immediately with extra Parmesan cheese and black pepper on top.
