Prepare the Mash
In a large pot, combine 2 cups of wheat with 4 cups of water. Stir well and bring to a boil over medium heat. Reduce heat and let simmer for about 30 minutes until the wheat is soft.

Cool and Add Yeast
Once the wheat has softened, remove the pot from heat and let it cool to room temperature. Add 1 teaspoon of yeast to the mixture. Stir gently to combine.

Fermentation
Cover the pot with a clean cloth and let it sit in a warm place for about 5 to 7 days. Stir the mixture daily until fermentation is complete (bubbling will slow down).

Set Up Distillation Apparatus
Prepare your glass distillation apparatus according to the manufacturer's instructions. Ensure it is clean and ready for use.

Distill the Fermented Mash
Pour the fermented mash into the distillation apparatus and heat it slowly. Collect the distillate that comes out of the apparatus. This is your raw vodka.

Filter with Activated Carbon
To purify your vodka, run it through a filter containing 1 cup of activated carbon. This will help remove impurities and improve flavor.

If desired, add 2 vanilla beans (split and scraped) and 1 tablespoon of citrus zest to the distilled vodka. Let it infuse for 1 to 2 weeks in a cool, dark place.
