Once the sugar is dissolved, remove the saucepan from heat and stir in 1 tablespoon of vanilla extract and 1 cup of water. Allow the mixture to cool to room temperature.

In a large mixing bowl or jar, combine the cooled coffee mixture with 2 cups of vodka. If using, add 1 cup of coffee liqueur for enhanced flavor.
