Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and dry the soaked fries thoroughly. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

Season and Serve
Remove the fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil, sprinkle with sea salt, black pepper, and grated parmesan cheese. Toss to combine and garnish with chopped parsley before serving.
