    Preheat the oven to 375°F (190°C). In a mixing bowl, combine the panko breadcrumbs, chopped Marcona almonds, fresh thyme, salt, and black pepper.

    Roll the goat cheese into small balls and then gently coat each ball in the panko and almond mixture, pressing lightly to ensure an even coat.

    Place the coated goat cheese balls on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for about 15-20 minutes, or until golden brown.
