Prepare the Spinach
Wash the spinach thoroughly and remove any tough stems. In a large pot of boiling water, blanch the spinach for about 2 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and squeeze out excess water. Chop coarsely and set aside.

Make the Cream Sauce
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Pour in the heavy cream and bring to a gentle simmer.

Stir in the grated Parmesan cheese, salt, black pepper, and nutmeg into the cream sauce. Mix well until the cheese is melted and the sauce is smooth.
