    Remove the cowboy ribeye from the refrigerator and let it come to room temperature for about 30-45 minutes.

    Generously season both sides of the ribeye with kosher salt, black pepper, and garlic powder. Rub the seasoning into the meat for better flavor absorption.

    Cooking

    Preheat your grill or cast iron skillet over high heat. Add olive oil and let it heat until shimmering.

    Searing

    Place the ribeye on the grill or skillet. Sear for about 4-5 minutes per side for medium-rare, adjusting the time if you prefer it more or less done.

    In the last few minutes of cooking, add butter and fresh rosemary to the skillet or grill. Baste the steak with the melted butter using a spoon.
