Prepare the Pork Belly
Preheat your oven to 400°F (200°C). Cut the pork belly into 1-inch cubes and season with salt and black pepper. Place the pork belly on a baking tray and roast for about 25-30 minutes or until crispy.

Cook the Brussels Sprouts
While the pork belly is roasting, trim the ends of the Brussels sprouts and cut them in half. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the Brussels sprouts, thyme, salt, and pepper. Cook for about 10-12 minutes until they are tender and slightly caramelized.

Combine and Serve
Once the pork belly is done, mix it with the Brussels sprouts in the skillet. Drizzle with balsamic vinegar and stir to combine. Serve hot, sprinkled with Parmesan cheese.
