    Remove the bone-in filet from the refrigerator and let it come to room temperature for about 30 minutes before cooking. Pat it dry with paper towels.

    Season the Steak

    Rub the filet with olive oil, then generously season both sides with kosher salt and black pepper. Sprinkle fresh rosemary and minced garlic over the steak.

    Preheat the Grill or Pan

    Preheat your grill or cast-iron skillet over high heat. If using a skillet, add a little oil to prevent sticking.

    Place the filet on the grill or in the skillet. For medium-rare, cook for about 4-5 minutes on each side, depending on thickness. Use a meat thermometer to check for doneness (130°F for medium-rare).
