    Prepare the Potatoes

    Preheat your oven to 375°F (190°C). Peel the russet potatoes and slice them thinly (about 1/8 inch thick).

    Make the Cream Mixture

    In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and milk, and stir to combine. Add salt, black pepper, and thyme (if using). Bring to a gentle simmer, then remove from heat.

    In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the first layer, then sprinkle with half of the grated cheese. Repeat with the remaining potatoes, cream, and cheese.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
