Method
Prepare the Falafel

Soak Chickpeas
Soak the chickpeas in water overnight. Drain and rinse before using.

Blend Ingredients
In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.

Form the Falafel
Transfer the mixture to a bowl and stir in the flour. Shape into small balls or patties.

Fry the Falafel
Heat the oil in a deep pan. Fry the falafel balls in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.
Assemble the Pita

Prepare the Pita
Warm the pita bread in the oven or on a skillet.

Fill the Pita
Spread hummus inside each pita and fill with fried falafel, cabbage, tomatoes, and pickled turnips.

Drizzle Sauce
Drizzle the Boustan sauce over the top before serving.
