Sauté the Vegetables

In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and bell pepper. Sauté for about 5 minutes until the vegetables are soft. Stir in the minced garlic and cook for another minute.

Toast the Bulgur

Add the bulgur wheat to the pot and stir well to coat with the oil and vegetables. Let it toast for about 2-3 minutes, stirring occasionally.

Add Broth and Seasonings

Pour in the vegetable broth, and add salt, black pepper, cumin, and paprika. Stir everything together.

Cook the Pilaf

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 12-15 minutes, or until the bulgur has absorbed the broth and is tender.

Finish with Herbs

Remove the pot from heat. Fluff the pilaf with a fork and stir in the chopped parsley. Adjust seasoning to taste if needed.
