Falafel Preparation

Soak the Chickpeas
Soak the dried chickpeas in plenty of water overnight, or for at least 8 hours.

Prepare the Mixture
Drain and rinse the chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until you have a coarse mixture. If the mixture is too wet, add flour a tablespoon at a time until it holds together.

Form the Falafel Balls
Using wet hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Heat the vegetable oil in a deep pan over medium heat. Fry the falafel in batches until they are golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Assemble the Bowl
Serve the hot falafel in a bowl with your choice of toppings such as hummus, tahini sauce, diced tomatoes, cucumbers, lettuce, and pickles.
