Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine yogurt, olive oil, minced garlic, cumin, coriander, turmeric, paprika, cinnamon, salt, black pepper, and lemon juice. Add the chicken thighs and coat them well with the marinade. Cover and refrigerate for at least 1 hour or overnight for best results.

  2. 2

    Cook the Chicken

Preheat your grill or oven to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill or bake the chicken for about 6-7 minutes per side or until fully cooked and juices run clear. Once cooked, let the chicken rest for 5 minutes before slicing.

Assembly

  1. 3

    Assemble the Shawarma

Slice the cooked chicken into thin strips. Take a piece of pita bread and layer on the sliced chicken. Top with diced tomato, cucumber, red onion, and chopped parsley. Drizzle with tahini sauce. Roll the pita tightly to enclose the fillings.

  2. 4

    Serve

Serve the chicken shawarma warm with extra tahini sauce on the side.
