For the Tabouleh

Method

Preparing the Beef Saj Bowl

  1. 1

    Prepare the Shawarma Beef

Cook the shawarma beef in a skillet over medium heat until fully cooked, about 5-7 minutes. Once cooked, set aside.

  2. 2

    Prepare the Cabbage Salad

Shred the cabbage and mix it with diced tomatoes and pickled turnips in a bowl. Drizzle with a little olive oil and season with salt and pepper to taste.

  3. 3

    Assemble the Saj Bowl

On a large piece of markouk bread, layer the cooked shawarma beef, cabbage salad, and drizzle with Boustan sauce. Fold the bread over to enclose the filling and cut into 6 pieces.

Preparing the Garlic Potatoes

  1. 4

    Cook the Potatoes

Peel and cut the potatoes into wedges. In a pot of boiling salted water, cook the wedges until tender, about 10-15 minutes. Drain and set aside.

  2. 5

    Sauté with Garlic

In a skillet, heat olive oil and sauté minced garlic until fragrant. Add the potato wedges, season with salt and pepper, and cook until golden brown, about 5-7 minutes.

Preparing the Tabouleh

  1. 6

    Mix the Ingredients

Rinse the bulgur wheat and soak it in water for 20 minutes. Drain and squeeze out excess water. In a bowl, combine chopped parsley, diced tomato, bulgur wheat, lemon juice, and olive oil. Season with salt to taste.
