In a mixing bowl, combine chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Set aside.

Prepare the Nut Filling

Thaw the phyllo dough according to package instructions. Preheat the oven to 350°F (175°C).

Prepare the Phyllo Dough

Grease a 9x13 inch baking dish with melted butter. Layer 8 sheets of phyllo dough, brushing each layer with melted butter. Spread a layer of the nut mixture on top. Repeat the process, layering 4 sheets of phyllo, then nuts, until all nuts are used. Finish with 8 layers of phyllo on top, brushing each with butter.

Assemble the Baklava

Using a sharp knife, cut the assembled baklava into diamond-shaped pieces. Bake in the preheated oven for 45-50 minutes or until golden brown.

Cut and Bake

In a saucepan, combine water, honey, and vanilla extract. Bring to a boil, then reduce heat and simmer for about 10 minutes.

Prepare the Syrup

Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over it. Let it cool completely before serving.
