Prepare the Mousse
In a mixing bowl, beat the cream cheese until smooth. Gradually add powdered sugar and mix until well combined. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Chill in the refrigerator for at least 30 minutes.
Strawberry Curd

Make the Strawberry Curd
In a saucepan, combine pureed strawberries, sugar, and lemon juice over medium heat. Stir until the sugar dissolves. In a separate bowl, whisk the eggs. Gradually add the strawberry mixture into the eggs, then return to the saucepan. Cook over low heat, stirring constantly until thickened. Remove from heat and stir in butter until melted. Let cool before layering.
White Chocolate Crisp

Prepare the White Chocolate Crisp
Melt the chopped white chocolate in a microwave or double boiler. Once melted, stir in the rice cereal until fully coated. Spread the mixture onto a parchment-lined baking sheet and let it cool completely. Once set, break into pieces.

Assemble the Cheesecake
In serving glasses or bowls, layer the cheesecake mousse, followed by a layer of strawberry curd, and top with pieces of white chocolate crisp. Repeat the layers if desired and serve chilled.
