Method

Marinating the Fish

Prepare the Marinade

In a bowl, mix together the soy sauce, sake, brown sugar, grated ginger, and minced garlic until the sugar is dissolved.

Marinate the Sablefish

Place the sablefish fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Grilling and Cooking

Prepare the Grill

Preheat your charcoal grill to medium-high heat. Make sure the grates are clean and lightly oiled.

Grill the Sablefish

Remove the sablefish from the marinade and shake off excess. Place the fillets on the grill and cook for about 4-5 minutes per side until cooked through and slightly charred.

Sauté the Vegetables

In a skillet, add a drizzle of oil and sauté the king oyster mushrooms until golden brown. Add the bull kelp and radishes, cooking until just tender.

Making the Bone Broth Emulsion

Heat the Bone Broth

In a saucepan, bring the bone broth to a simmer. Stir in butter until melted and emulsified. Season with salt and pepper to taste.

Plating

Serve

On a plate, place a portion of the sautéed vegetables, top with grilled sablefish, and drizzle with the bone broth emulsion. Serve immediately.
