Preparation
- 1
Cook the Rice
Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare the Vegetables
Wash and cut all the vegetables: slice the bell peppers, zucchini, and carrots; separate the broccoli into florets; and trim the ends of the snow peas.
- 3
Make the Sauce
In a small bowl, mix together the soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water until well combined. This will create a savory sauce for the stir fry.
- 4
Sauté the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the prepared vegetables and stir-fry for about 5-7 minutes until they are tender-crisp.
- 5
Add the Sauce
Pour the sauce over the sautéed vegetables and stir well to coat. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and evenly coat the vegetables.

Plate the Dish
Serve the vegetable stir fry over a bed of rice. Enjoy your healthy and colorful vegetable stir fry!
