Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour until doubled in size.

Shape the Pretzel Sticks
Preheat your oven to 425°F (220°C). After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 1/2 inch thick) and shape into a pretzel or stick.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water and 1/2 cup of baking soda to a boil. Carefully drop the pretzel sticks into the boiling water for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper.

Bake the Pretzel Sticks
Sprinkle coarse sea salt on top of the pretzel sticks and bake in the preheated oven for about 12-15 minutes, or until golden brown.

Add Flavor
Mix in the diced jalapeños, garlic powder, onion powder, and salt. Stir until all ingredients are well combined and heated through.

Transfer the queso blanco to a serving bowl and serve warm alongside the pretzel sticks.
