Lettuce Wraps & Rice Recipe

Your choice of grilled chicken, pork carnitas or grilled shrimp with black beans, corn, peppers and onions. Served with seasoned sour cream, guacamole, pico de gallo and Revol Greens Butter Leaf Lettuce. Served with a side of rice.

    Prepare the Rice

    In a medium saucepan, combine the white rice and water. Bring to a boil over high heat, then reduce the heat to low. Cover and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

    Prepare the Protein

    For grilled chicken: Season the chicken with salt, pepper, and your choice of spices. Grill on medium heat for 6-7 minutes per side or until cooked through. Let it rest for a few minutes before slicing. For pork carnitas: Warm the carnitas in a skillet over medium heat until heated through. For grilled shrimp: Season the shrimp with salt, pepper, and a squeeze of lime juice. Grill for 2-3 minutes per side until opaque and cooked through.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes until the vegetables are softened. Add the black beans and corn, and cook for another 3-4 minutes until heated through. Season with salt and pepper to taste.

    Assemble the Wraps

    Take a leaf of the butter lettuce and place a spoonful of the sautéed vegetable mixture in the center. Add your choice of protein on top, then top with a dollop of seasoned sour cream, guacamole, and pico de gallo. Wrap the lettuce around the filling and serve immediately.

    Serve with Rice

    Serve the lettuce wraps alongside a portion of the fluffy rice. This dish can be enjoyed with additional condiments on the side.
