Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade. Place the salmon fillets in the marinade and let them sit for at least 30 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat your grill to medium-high heat.

Grilling the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is grilling, slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

  2. 5

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

Grilling the Vegetables

  1. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving the Dish

  1. 7

    Plate the Dish

Once both the salmon and vegetables are cooked, remove them from the grill and let them rest for a minute. Serve the grilled salmon alongside the seasonal grilled vegetables.
