Method

For the Fish

  1. 1

    Prepare the Batter

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until smooth. Let the batter rest for about 15 minutes.

  2. 2

    Heat the Oil

In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Fish

Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, cooking in batches as needed. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

For the Fries

  1. 4

    Prepare the Potatoes

Peel and cut the russet potatoes into thick strips. Rinse them in cold water to remove excess starch and pat dry with a towel.

  2. 5

    Heat the Oil

In a separate pot or fryer, heat the oil for frying over medium-high heat until it reaches 350°F (175°C).

  3. 6

    Fry the Potatoes

Carefully add the potato strips to the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels, then sprinkle with salt.

For the Tartar Sauce

  1. 7

    Mix the Ingredients

In a medium bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until combined. Season with salt and black pepper to taste.
