Preparation of Brussels Sprouts

    Trim and Halve

    Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each Brussels sprout in half lengthwise.

    Seasoning

    In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until well coated.

Balsamic Glaze Preparation

    Combine Ingredients

    In a small saucepan over medium heat, combine balsamic vinegar and honey.

    Simmer

    Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 10-15 minutes, stirring occasionally, until it thickens slightly.

Roasting

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Arrange on Baking Sheet

    Spread the seasoned Brussels sprouts evenly on a baking sheet, cut side down.

    Roast

    Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown.

Serving

    Drizzle and Top

    Once the Brussels sprouts are done roasting, remove them from the oven and drizzle the balsamic glaze over them. Sprinkle with crumbled feta cheese and chopped parsley, if using.
