Prepare the Pork
In a large bowl, combine the pork shoulder with fajita seasoning, olive oil, minced garlic, lime juice, and salt. Mix well to ensure the pork is evenly coated with the seasoning.

Marinate
Cover the bowl with plastic wrap and let the pork marinate in the refrigerator for at least 1 hour, preferably overnight for best flavor.

Cook the Pork
Preheat your oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover with aluminum foil. Roast in the oven for about 3 to 4 hours, or until the pork is tender and easily shredded with a fork.

Shred the Pork
Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks and set aside.

Prepare Taco Ingredients
While the pork is resting, prepare your taco toppings: shred the cheddar jack cheese, drain and rinse the black beans, and dice the tomato.

Assemble the Tacos
Warm the taco shells or tortillas according to package instructions. In each taco shell, layer shredded pork as the base, followed by shredded cheddar jack cheese, black beans, roasted corn, diced tomato, and shredded lettuce.

Add Dressing
Drizzle chipotle ranch dressing over the assembled tacos to your taste.

Serve the carnitas tacos immediately while warm, and enjoy!
