Prepare the Ahi Tuna
Season the Ahi tuna with salt and pepper. Sear it in a hot pan with a little oil for about 30 seconds on each side. Remove from heat and let it rest for a few minutes before slicing thinly.
Make the Prickly Pear Gastrique
In a small saucepan, combine prickly pear puree, sugar, red wine vinegar, and salt. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Reduce the heat and let it simmer until it thickens slightly, about 5-7 minutes. Set aside to cool.
Prepare the Salad
In a large bowl, combine diced watermelon, cooked nopales, cucumber, and chopped cilantro. Drizzle with lime juice and toss gently to combine.
Assemble the Dish
Place a generous portion of the salad on a plate, top with slices of Ahi tuna, and drizzle with prickly pear gastrique. Serve immediately.
