Prepare the ingredients
Slice the pretzel buns in half. Slice the tomatoes and dice the green chile. If using bacon, cook until crispy and set aside.
Assemble the sandwich
On the bottom half of each pretzel bun, layer Monterey Jack, yellow cheddar, and white cheddar cheeses. Add sliced tomatoes, diced green chile, and bacon if using.
Grill the sandwich
Top the sandwich with the other half of the pretzel bun. Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the sandwich in the skillet and grill for about 3-4 minutes until golden brown. Add the remaining butter to the skillet, flip the sandwich, and grill the other side for another 3-4 minutes until the cheese is melted and the bun is golden brown.
Serve
Remove from skillet, cut in half if desired, and serve warm.
