Wash all the vegetables thoroughly under cold water.

Peel the cucumber if desired, then slice into rounds or half-moons.

Remove the seeds and membranes from the bell peppers, then slice into strips or bite-sized pieces.

Peel the carrots and cut them into thin sticks or rounds.

Trim the tops and bottoms of the radishes and slice them thinly.

Cut the zucchini into thin rounds or half-moons.

In a large mixing bowl, combine all the prepared vegetables.

Drizzle the olive oil over the vegetables, then sprinkle with salt and black pepper. Toss gently to coat.

Chop the fresh herbs and add them to the vegetable mixture. Toss again to combine.

Transfer the seasoned vegetables to a serving platter or individual cups for hors d'oeuvre presentation.
