Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs. Then, add the fresh orange juice, grated orange zest, olive oil, and vanilla extract. Mix until smooth.

  4. 4

    Combine Wet and Dry Mixtures

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cake

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, turn it out onto a wire rack to cool completely.

Citrus-Honey Yogurt Preparation

  1. 7

    Prepare the Yogurt

In a mixing bowl, combine the plain Greek yogurt, honey, fresh lemon juice, grated lemon zest, and a pinch of salt. Mix until smooth and well combined.

  2. 8

    Serve

Once the cake has cooled completely, slice it and serve with a generous dollop of the citrus-honey yogurt on the side.
