Method

Preparing the Seafood

    Prep the Seafood

    In a bowl, combine the shrimp, mussels, calamari, and white fish. Season lightly with salt and pepper. Set aside.

Cooking the Paella

    Heat the Oil

    In a large paella pan or wide skillet, heat the olive oil over medium heat.

    Sauté the Aromatics

    Add the chopped onion and red bell pepper to the pan. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and sauté for another minute until fragrant.

    Add the Rice

    Stir in the bomba rice, ensuring it is well-coated in the oil and mixed with the aromatics. Cook for 2-3 minutes.

    Pour in the Broth

    Add the fish stock or seafood broth gradually. Stir in the saffron, paprika, and diced tomato. Bring to a simmer and cook for about 10 minutes, stirring occasionally.

    Add the Seafood

    Arrange the prepared seafood on top of the rice mixture. Do not stir. Cook for an additional 10-15 minutes until the seafood is cooked through and the rice has absorbed most of the liquid.

    Finish and Serve

    Once the rice is tender and the seafood is cooked, remove from heat. Let the paella sit for 5 minutes before serving. Garnish with green peas and lemon wedges.
