Preparing the Potatoes

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Potatoes
Peel and cut the potatoes into even-sized cubes (around 1 inch).

Season the Potatoes
In a large bowl, toss the potato cubes with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

Bake the Potatoes
Spread the potatoes out in a single layer on a baking sheet. Bake for 30-35 minutes, flipping halfway through, until crispy and golden.
Making the Spicy Tomato Sauce

Sauté the Garlic
Once the oil is hot, add minced garlic and sauté for 1-2 minutes until fragrant.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, red pepper flakes, salt, sugar, and balsamic vinegar. Allow to simmer for about 10 minutes, stirring occasionally.
Preparing the Aioli

Mix the Aioli Ingredients
In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth.

Refrigerate
Cover and refrigerate the aioli until ready to serve.
Serving

Plate the Dish
Once the potatoes are done baking, serve them hot, drizzled with the spicy tomato sauce and accompanied by the aioli on the side.
