Preparation

    Prepare the Seafood

    Clean and prepare all the seafood: peel the shrimp, clean the clams and mussels, and cut the monkfish and sepia into bite-sized pieces.

    Soak the Saffron

    In a small bowl, soak the saffron threads in a couple of tablespoons of warm water to release their flavor.

    Sauté Aromatics

    In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Add Seafood

    Add the monkfish, sepia, squid, and shrimp to the pan. Cook for about 5-7 minutes until the seafood starts to turn opaque.

    Add Rice

    Stir in the bomba rice and cook for another 2-3 minutes, allowing the rice to absorb the flavors.

    Add Liquid

    Pour in the water or seafood stock, and add the soaked saffron along with its soaking water. Season with salt and black pepper to taste. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 10 minutes without stirring.

    Add Clams and Mussels

    After 10 minutes, add the cleaned clams and mussels on top of the rice. Cover the pan with a lid or foil and cook for another 5-10 minutes until the clams and mussels have opened and the rice is tender.

    Final Touch

    Once cooked, remove the paella from the heat and let it rest for 5 minutes. Drizzle with salsa verde before serving.
