Method

For the Sliders

    Prepare the Beef Patties

    In a large bowl, combine the ground beef with salt and black pepper. Mix until just combined, being careful not to overwork the meat.

    Shape the Patties

    Divide the mixture into 12 equal portions and shape them into small patties, slightly larger than your slider buns.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for 3-4 minutes on each side or until cooked to your desired doneness.

For the Sobrasada-Bacon Jam

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then chop into small pieces.

    Sauté Onions and Garlic

    In the same skillet, add the chopped onion and minced garlic. Sauté until onions are translucent, about 5 minutes.

    Add Sobrasada and Other Ingredients

    Add sobrasada, brown sugar, and apple cider vinegar to the skillet. Stir to combine and cook over low heat for 10-15 minutes until the mixture thickens.

    Combine with Bacon

    Stir in the cooked bacon pieces and mix well. Remove from heat and set aside.

For the Crispy Manchego Cheese

    Prepare the Cheese

    Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

    Bake the Cheese

    Place small mounds of grated Manchego cheese on the prepared baking sheet, spacing them apart. Bake for 5-7 minutes until golden and crispy.

    Remove from the oven and let cool slightly before carefully lifting them off the parchment.

For the Garlic Allioli

    Mix the Ingredients

    In a bowl, combine mayonnaise, minced garlic, and lemon juice. Mix well until smooth.

    Adjust Flavor

    Taste and adjust seasoning with salt or extra lemon juice as needed.

Assembly

    Assemble the Sliders

    On each slider bun, place a cooked beef patty, a spoonful of sobrasada-bacon jam, a piece of crispy Manchego cheese, and a dollop of garlic allioli. Top with the other half of the bun.
