Preparing the Dish

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook until it is browned and cooked through, about 5-7 minutes. Break it up into small pieces as it cooks.

    Combine with Tomato Sauce

    Once the chorizo is cooked, add the tomato sauce to the skillet. Stir to combine and let it simmer for about 5 minutes to allow the flavors to meld.

    Add Peppers and Cheese

    Stir in the roasted piquillo peppers and miti crema cheese into the sauce, allowing the cheese to melt into the mixture. Cook for an additional 2-3 minutes.

    Make two small wells in the sauce and gently crack an egg into each well. Cover the skillet and let the eggs cook in the sauce for about 5-7 minutes, or until the whites are set but the yolks are still runny.

    Finish with Salsa Verde

    Once the eggs are cooked to your liking, drizzle the salsa verde over the top of the dish.
