Steak Preparation

    Season and Sear the Steak

    Rub the outside skirt steak with olive oil, salt, and black pepper. Preheat a skillet over medium-high heat and sear the steak for about 3-4 minutes on each side or until it reaches your desired doneness. Remove from heat and let it rest for a few minutes before slicing.

Crispy Potatoes

    Prepare and Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water for about 5 minutes until slightly tender. Drain and toss with olive oil, salt, and paprika. Spread them onto a baking sheet and roast in a preheated oven at 425°F (220°C) for 20-25 minutes or until crispy and golden, turning halfway through.

Sunny Side-Up Eggs

    Cook the Eggs

    In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until whites are set but yolks remain runny, about 3-4 minutes. Remove from heat.

Mojo Verde Sauce

    In a food processor, combine fresh cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning to taste.

Assembly

    On a plate, place a portion of crispy potatoes, top with sliced skirt steak, and place the sunny side-up eggs on top. Drizzle with mojo verde sauce before serving.
