    Prepare the Ingredients

    Gather and measure all ingredients. Clean and chop the vegetables, and prepare the seafood and meat as indicated.

    Sauté the Meat

    In a large paella pan, heat 2 tablespoons of olive oil over medium heat. Add the chicken chunks and chorizo slices, cooking until the chicken is browned and cooked through. Remove from the pan and set aside.

    Cook the Vegetables

    In the same pan, add the remaining 2 tablespoons of olive oil. Add the chopped onion, red and green bell peppers, and minced garlic. Sauté until the vegetables are softened and fragrant.

    Add the Rice and Liquids

    Stir in the bomba rice, coating it in the vegetable mixture. Pour in the dry white wine and allow it to simmer until mostly evaporated. Then, stir in the chicken broth and saffron threads, and season with smoked paprika, salt, and pepper.

    Combine Everything

    Return the sautéed chicken and chorizo to the pan. Arrange the shrimp, mussels, and calamari on top of the rice mixture. Do not stir the mixture anymore.

    Cook the Paella

    Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pan with a lid or aluminum foil and let it cook for about 20-25 minutes, or until the rice is al dente and has absorbed the liquid.

    Finish and Serve

    Remove the pan from heat and let it rest for 5 minutes. Garnish with frozen peas and serve with lemon wedges on the side.
