    Prepare the Chorizo

    Slice the chorizo sausage into thick rounds, about 1-inch in thickness, and set aside.

    Chop Aromatics

    Finely chop the onion and mince the garlic. Set aside for later use.

Cooking

    Sauté the Aromatics

    In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Brown the Chorizo

    Add the sliced chorizo to the skillet and cook until browned on both sides, about 5-7 minutes.

    Deglaze with Red Wine

    Pour in the red wine, scraping any browned bits off the bottom of the skillet. Add the bay leaves and thyme. Bring to a simmer.

    Braised Cooking

    Reduce the heat to low, cover, and let it braise for 15-20 minutes until the chorizo is infused with the wine flavors. Season with salt and black pepper to taste.

Serving
