    Prepare the Ingredients

    Shred the roasted chicken and chop the piquillo peppers. Dice the onion and mince the garlic.

Cooking

    Sauté the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.

    Cook the Chorizo

    Add the sliced chorizo to the pan and cook for another 3-4 minutes until it starts to brown.

    Add Rice and Spices

    Stir in the bomba rice, paprika, and saffron. Cook for 2 minutes to toast the rice.

    Add Chicken Broth

    Pour in the chicken broth and bring to a simmer. Season with salt and black pepper to taste.

    Combine Ingredients

    Add the shredded roasted chicken, chopped piquillo peppers, and frozen peas to the pan. Stir gently to combine.

    Cook the Paella

    Let the mixture simmer without stirring for about 20 minutes or until the rice is tender and has absorbed most of the liquid.

    Make small wells in the rice and crack an egg into each well. Cover the pan and cook for an additional 5-7 minutes, until the eggs are set to your desired doneness.

    Remove the pan from heat and let it rest for a few minutes. Garnish with fresh herbs if desired and serve hot.
