Mini Scrambled Egg Sandwiches

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and place on paper towels to drain excess grease.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper. In the same skillet used for the bacon, add olive oil and heat over medium-low heat. Pour in the egg mixture and gently stir with a spatula until the eggs are fluffy and cooked through, about 3-4 minutes.

    Assemble the Sandwiches

    Slice the mini baguettes in half. On the bottom half, layer the scrambled eggs, followed by a slice of Jamón Serrano, a slice of Mahón cheese, and a piece of crispy bacon. Drizzle with salsa verde and garlic aioli. Place the top half of the baguette on the sandwich.

    Prepare the Potatoes

    Wash and slice the russet potatoes into thin rounds, about 1/8 inch thick. Rinse them in cold water to remove excess starch.

    Fry the Chips

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add a handful of potato slices, ensuring not to overcrowd the pot. Fry until golden and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

    While still hot, sprinkle the fried chips with salt to taste. Continue frying the remaining potato slices in batches.
