Braised Short Rib

Prepare the Short Ribs
Season the beef short ribs with salt and black pepper on all sides.

Sear the Ribs
In a large pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Once hot, add the short ribs and sear until browned on all sides, about 4-5 minutes per side. Remove the ribs and set aside.

Braise the Ribs
Return the short ribs to the pot along with the beef broth and bay leaves. Bring to a simmer, cover, and reduce the heat to low. Let it braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Prepare the Pickling Liquid
In a small saucepan, combine white vinegar, water, sugar, and salt. Heat over medium until the sugar and salt dissolve.

Mix the Spread
In a bowl, combine the softened cream cheese, chopped rosemary, minced garlic, olive oil, and salt. Mix until smooth and creamy.
Assemble the Naanwich

Prepare the Naan
Warm the naan bread in a dry skillet over medium heat for 1-2 minutes on each side until pliable.

Spread the Rosemary Garlic Mixture
Spread a generous amount of the rosemary garlic spread on one side of each piece of naan.

Layer the Ingredients
On the spread side of the naan, layer the shredded braised short rib, pickled red onion, spring mix, tomato slices, and pickles.

Fold the naan over to enclose the filling, slice in half if desired, and serve immediately.
