    Prepare the Potatoes

    Wash and dice the tri-color potatoes into small cubes.

    Cook the Meat

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add your choice of ham, bacon, sausage, or chorizo. Cook until browned and crispy, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Potatoes

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced potatoes, salt, black pepper, and paprika. Stir well to coat the potatoes in oil and spices. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown.

    Add Eggs and Cheese

    Once the potatoes are cooked, make a few wells in the potatoes and crack the eggs into the wells. Cook until the whites are set but the yolks are still runny, about 5-7 minutes. Sprinkle the shredded cheddar jack cheese over the top and cover the skillet with a lid until the cheese melts, about 2-3 minutes.

    Combine and Serve

    Add the cooked meat back to the skillet. Gently mix everything together, and cook for an additional minute to heat through. Serve hot, garnished with fresh herbs if desired.
