Preparing the Steak and Vegetables

Cook the Steak
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the shaved strip steak and season with salt and black pepper. Cook for about 3-4 minutes, stirring occasionally until the meat is browned and cooked through. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, onion, and mushrooms. Cook for about 5-7 minutes, or until the vegetables are tender and caramelized. Season with additional salt and black pepper to taste.

Assembling the Sandwiches

Toast the Hoagie Rolls
Preheat your oven to 350°F (175°C). Slice the hoagie rolls lengthwise without cutting all the way through. Place them on a baking sheet and toast in the oven for about 5-7 minutes or until lightly golden.

Add Cheese
Once the rolls are toasted, remove them from the oven. Layer the steak and vegetable mixture evenly into each roll, and top with slices of provolone cheese.

Melt the Cheese
Return the assembled sandwiches to the oven and bake for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Remove from the oven, let cool slightly, then serve hot. Enjoy your Philly-style sandwiches!
