Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).

Fry the Waffle Fries
Carefully add the frozen waffle fries to the hot oil in batches and fry until golden brown and crispy, about 4-6 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Sprinkle the flour over the cooked sausage and stir well to combine. Cook for 1-2 minutes until the flour is lightly browned.

Add the Milk
Gradually whisk in the milk, ensuring no lumps form. Continue to cook, stirring frequently, until the gravy thickens, about 5-7 minutes.

Season the Gravy
Add salt, black pepper, garlic powder, and red pepper flakes to the gravy. Stir well to combine and adjust seasoning to taste.

Place a generous portion of crispy waffle fries on a plate and ladle the hot sausage gravy over the top. Serve immediately.
