Preparation of Marinara Sauce

Sauté the Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. If desired, add red pepper flakes for heat.

Simmer the Sauce
Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20 minutes, stirring occasionally.

Taste and Adjust
Taste the sauce and adjust seasoning if needed. Set aside and keep warm.
Preparation of Fried Calamari

Prepare the Squid
Rinse the cleaned squid under cold water and cut it into rings, about 1/2 inch thick.

Mix the Dry Ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated squid rings to the hot oil in batches, frying until golden brown (about 2-3 minutes).

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately with the marinara sauce.
