Prepare the Salad Base

    Wash and Chop

    Wash the spring mix and romaine lettuce under cold water. Tear the romaine into bite-sized pieces and combine with the spring mix in a large salad bowl.

Cook the Bacon

    Cook Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and place on paper towels to drain excess fat. Once cooled, crumble the bacon into pieces and set aside.

Prepare the Fried Brie

    Prepare Brie

    Cut the brie cheese into wedges or rounds, depending on your preference.

    Dredge Brie

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each piece of brie first in flour, then in the egg, and finally coat with breadcrumbs.

    Fry Brie

    In a deep skillet or pot, heat the oil over medium-high heat. Once hot, carefully add the breaded brie pieces and fry until golden brown, about 1-2 minutes per side. Remove and place on a paper towel-lined plate to drain.

Assemble the Salad

    In the large salad bowl with the greens, add the cooked bacon, sun-dried tomatoes, pickled red onion, candied walnuts, and house-made croutons.

    Top the salad with the fried brie pieces.

    Drizzle the raspberry vinaigrette over the salad and gently toss to combine. Serve immediately.
