For the Beer Battered Fish

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let it rest for about 20 minutes.

Heat the Oil
In a deep frying pan or a large pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and float.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, and carefully place them into the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove the fish and place on paper towels to drain excess oil.

Fry the Waffle Fries
In another deep frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the waffle fries in batches. Fry for about 4-6 minutes or until they are golden brown and crispy. Remove and drain on paper towels. Season with salt and pepper to taste.

In a small bowl, mix together the mayonnaise, relish, lemon juice, and dijon mustard until well combined. Season with salt and black pepper to taste.
