Method

Cake Preparation

  1. 1

    Melt Chocolate and Butter

In a medium saucepan over low heat, combine the unsalted butter and semi-sweet chocolate. Stir until melted and smooth. Remove from heat and set aside to cool slightly.

  2. 2

    Mix Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and fluffy.

  3. 3

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring continuously until well combined.

  4. 4

    Add Vanilla and Flour

Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Do not overmix.

Baking

  1. 5

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with flour to prevent sticking.

  2. 6

    Fill Ramekins

Divide the cake batter evenly among the prepared ramekins, filling them about 2/3 full.

  3. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  4. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate to release the cakes. Serve immediately with scoops of vanilla ice cream on the side.
