    Mix dry ingredients

    In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

    Combine wet ingredients

    In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

    Combine mixtures

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. It's okay if there are a few lumps; do not overmix.

    Heat the skillet

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of butter or oil.

    Cook pancakes

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

    Carefully flip the pancakes using a spatula and cook for another 1-2 minutes until golden brown and cooked through. Repeat with the remaining batter.

For blueberry syrup, cook fresh or frozen blueberries with sugar and a splash of water until the berries burst and the mixture thickens. For maple syrup, simply warm the syrup in a small saucepan.
