Preheat Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently with a fork until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Use a biscuit cutter to cut out rounds.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, until golden brown.
Sausage Gravy

Cook Sausage
In a large skillet over medium heat, add the pork sausage. Cook until browned and crumbled, about 5-7 minutes.

Make Roux
Sprinkle the flour over the cooked sausage and stir well to combine. Cook for another minute to get rid of the raw flour taste.

Add Milk
Gradually whisk in the milk, stirring constantly until the gravy thickens, about 3-5 minutes.

Season with black pepper and salt to taste. Keep warm on low heat until ready to serve.
Hash Browns

Prepare Potatoes
Peel and grate the russet potatoes using a box grater or food processor.

Remove Excess Moisture
Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

Cook Hash Browns
In a large skillet, heat the vegetable oil over medium-high heat. Add the grated potatoes in an even layer and season with salt. Cook for about 5-7 minutes, until crispy and golden, then flip and cook the other side.
