Pretzel Dough

Method

Pretzel Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

  4. 4

    Shape the Pretzels

After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 20 inches), then twist into a pretzel shape.

  5. 5

    Prepare for Baking

Preheat the oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil and add baking soda. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.

  6. 6

    Bake the Pretzels

Bake in the preheated oven for 12-15 minutes until golden brown.

Monterey Jack Cheese Sauce Preparation

  1. 7

    Make the Roux

In a saucepan over medium heat, melt the butter. Once melted, add the flour and stir continuously for 1-2 minutes until it forms a smooth paste.

  2. 8

    Add Milk

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens (about 3-5 minutes).

  3. 9

    Add Cheese and Seasonings

Reduce heat to low and stir in the shredded Monterey Jack cheese, garlic powder, onion powder, salt, and black pepper. Stir until the cheese is completely melted and the sauce is smooth.

  4. 10

    Serve

Serve the warm pretzels with the cheese sauce for dipping.
